Maple Syrup Crystallization and the Production of Derivative Products
Description:
Maple Syrup crystallization is the phenomenon at the heart of the production of derivative products. Transforming maple syrup into derivative products, particularly maple butter, is a difficult art to master. This is mainly because the composition of the raw material is subject to significant fluctuations, and their impact on the process—and ultimately the quality and stability of the final product—remains poorly understood. This conference provides an overview of current knowledge in maple syrup processing and presents a new research project by the ACER Center, conducted in collaboration with Laval University, the Quebec Institute of Tourism and Hotel Management, and Prestige Maple Products. This project primarily aims to evaluate the effects of raw material composition and production parameters on the quality and stability of maple butter.
